Employees shall know to wash hands when contaminated. An employee washed hands and recontaminated hands during the hand washing process by not turning the water off with a paper towel or other barrier.
Correction: education, the employee rewashed his hands and turned off the water with a paper towel.
*A hand wash is also required before putting on clean gloves. Employee grabbed clean gloves without washing hands. Correction: gloves were discarded and clean gloves were donned. |

Dishes shall be clean to sight and touch. Clean pumps that were air drying were visibly dirty and dirty to touch. Reside was removed with a finger tip. The brushes are not reaching all of the crevices to clean the pumps. Since the pumps cannot be effectively cleaned, do not reuse them. Pumps are not being fully disassembled when cleaned. There was visibly mirky water in the pump. Facility has brushes but not brushes that can get into very small crevices. Pitchers are to be washed, rinsed and sanitized at least every 4 hours or changed out every 4 hours. Pitchers had discolored pink build up on the bottom. Pumps were placed in the sink. A follow up visit within 10 days will be made to check the cleaning of the pumps |

All cold holding foods shall be maintained at 41F or less. Items in the prep cooler were above 41F. The thermometer inside of the unit was reading 52F, the outside thermometer was reading 39F. Manager stated that multiple work orders have been placed and was told they were fixed. Check temperatures daily to ensure food are maintains 41F or less. If it is not do not use the unit. Do not use the unit for any TCS foods until it can maintain temperature. Follow up visit within 72 hrs required. TCS items were voluntarily discarded. |

TCS foods may only be date marked for 7 days once opened. The oat milk is being date marked for more than 7 days. A container of almond milk surpassed the 7 day date marking. One date did not actually exist (11/31). Educate employees on date marking. The Manager states that the company date marking chart is being followed. The company has to follow food code date marking. At this point NC food code or the manufacturer date marking is not being followed. A follow up visit will me made within 10 days to check date marking. Date mark TCS foods (almond milk, oat milk and opened canned pumpkin). Canned pumpkin was not date marked during the inspection. All items were voluntarily discarded. Items that had not surpassed the 7 day date marking (labeled for more than 7 days) was allowed to be kept because it was still within the 7 day time frame. |

There were multiple cans of canned pumpkin that was dented on the seam, seal and other areas. Manager stated that cans come in that way and they use them. The canned goods were not separated or segregated. Canned goods that arrive damaged should be given back to the supplier for credit or discard. If the damaged items will be returned later, set them aside and label not to use. If the canned goods become dented and you saw it become dented or damaged, the product may be opened and used right then. 10 day follow up required to ensure there are no canned goods damaged on the seam or seal. |
