General CommentsEstablishment uses TPHC for their chicken tenders, potato wedges, etc. Establishment does not use TPHC for the rotisserie chicken. EH and PIC wrote a TPHC procedure during today’s inspection. Sushi rice PH was 3.9 during inspection.
