General CommentsItems were placed in the steam table to reheat at 9:00am. Items had until 11am to reheat. Owner came in later and discussed that the items were not placed in the steam table at 9:00am. EHS must take the word of the employee who placed the items in the steam table and told EHS 9am. All items excluding the cheese sauce and the beans were able to move and reach reheating temperatures between just opened and commercially proceed or cooked and cooled in house.

Use suitable utensils, single-use gloves, or dispensing equipment. P correction : The lettuce was voluntarily discarded. EHS spoke with PIC about the need to wear gloves with RTE foods and how we can use other methods to prevent physical contamination like the gloves cutting off into the lettuce.

Reheat all ready-to-eat TCS foods commercially processed and packaged in a food processing plant to 135F for hot holding. P Correction : Items were not moved to the stove top until their 1 hour and 59 minute of reheating. Both items were voluntarily discarded. 3-403.11 Observed chili and other items cooled and reheated not meeting reheating measures. TCS foods that are cooked, cooled, and reheated for hot holding shall be reheated so that all parts of the food reach a temperature of 165F for 15 seconds. P Correction : Items were moved to the stove top and were able to reach above 165F.

This bottle is just for drains and nothing that comes in contact with food. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. Pf Correction : PIC was able to identify and labeled correctly. 7-201.11 Observed two bottles of chemicals stored on a food prep surface next to single service items. Poisonous or toxic materials shall be stored to not contaminate food, equipment, utensils, linens, and single-service and single-use articles by separating with space or partitioning. P Correction: the items were moved to a shelf below.

Items were placed in coolers at time of inspection to continue thawing and staff was educated on how to properly thaw. Correction : The water was turned on.

Observed the handle to the reach in cooler in poor repair and the handle to the under counter cooler. Particle board front counter shelves are wearing down showing particle board underneath. Nonfood-contact surfaces of equipment exposed to splash, spillage, or other food soiling or requiring frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. Replace/re-coat shelving in coolers. Repair/replace the particle board shelving so it is smooth and easily cleanable. 4-501.11 Good Repair and Proper Adjustment - Equipment (C). Observed torn gaskets on several equipment. Ensure that equipment is maintained in good repair.
