NonFOOD-CONTACT SURFACES of EQUIPMENT that are exposed to splash, spillage, or other FOOD soiling or that require frequent cleaning shall be constructed of a CORROSION-RESISTANT, nonabsorbent, and SMOOTH mater 4-402.12 Fixed Equipment, Elevation or Sealing (C). 3 Comp sinks separating from wall creating an uncleanable gap. EQUIPMENT that is fixed because it is not EASILY MOVABLE shall be installed so that it is SEALED to adjoining EQUIPMENT or walls, if the EQUIPMENT is exposed to spillage or seepage. Re-caulk/re-seal to wall. 4-205.10 There is a house hold mini fridge being used until they can get their prep cooler fixed. A new one arrived during EH visit. Except for toasters, mixers, microwave ovens, water heaters, and hoods, food equipment shall be used in accordance with the manufacturer’s intended use and certified or classified for sanitation by an ANSI-accredited certification program. 4-501.12 Cutting boards are badly scratched. Cutting blocks and boards subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized shall be discarded. 4-202.16 Observed the lid to the flour in the back with a crack in it. Nonfood-contact surfaces shall be free of unnecessary ledges, projections, crevices, and constructed to allow easy cleaning and facilitate maintenance.

There is build up on the sink and walls of the basins. Major buildup on floors and walls. The ceiling has build up in most areas. Ensure that physical facilities are maintained clean to sight and touch. 6-501.11 The walls throughout the establishment are damaged and in poor repair. Physical facilities shall be maintained in good repair. 6-501.114 The establishment has multiple equipment that is not in use. There is a prep unit in the middle of the kitchen that is not in use. The establishment must keep its premises free of materials that are not necessary for the establishment's operation or maintenance, such as litter or nonfunctional or no longer used equipment.
