PIC does not know the last time it was checked. Maintain sanitizer at correct concentrations when being used to sanitize. P Correction: The 3 comp sink was set up and EHS worked with PIC to manually load the bleach until the machine is fixed. The repair man will be out around 4pm today to repair the machine. 4-602.11 Observed the ice machine with build up black growth along the walls and baffle wall. Food contact surfaces and utensils shall be cleaned at a frequency to avoid contamination.

Spaghetti was still in cooling time parameters and was moved to walk in cooler with plastic bags vented.

Ensure that all equipment besides those listed above are made and used for commercial 4-501.11 Equipment shall be maintained in good repair. Observed multiple torn gaskets inside of the facility. Repair as needed.

Interior of dish machine is soiled with buildup and needs to be de-limed. Ensure that dish machine interiors are cleaned at least daily and de-limed as needed. 4-302.14 Establishment does not have a testing device for their manual 3 comp quat sanitizer. The establishment does not have a bleach test strip for their chemical dish machine. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Pf VERIFICATION NEEDED by September 4th.
