2-301.12 Food employees shall clean their hands and exposed portions of their arms for at least 20 seconds. P. Observed employee wash hands at hand sink for less than ten seconds (wash at least 20 seconds). CDI- employee was educated. No REPEAT for different violation.
Establishment only has one hand sink in the kitchen, prep and dishwash areas located on the far side of the kitchen from the make line and dishwash areas. Recommend installing a hand sink in the dishwash area near the the make line and 3-compartment sink. |

Some items were held in cooler drawers since yesterday. Other items were taken from the walk-in cooler this morning. CDI- sliced roast beef, sliced turkey, sliced ham, shredded chicken, white rice, meatloaf were discarded into trash. Other items were placed in cooler and allowed to chill. |
