General CommentsEHS observed dish machine removed. PIC stated that the new dish machine has been ordered. EHS spoke with dish machine representative who stated that the dish machine may not be installed for two or three weeks. Facility to use 3-compartment sink to W/R/S equipment and only use single-use single-service items for food service. ITS to be issued until dish machine is installed and operating. Facility is voluntarily closing today while WIC repairs are being made. EHS to follow-up with facility to ensure compliance. Facility operators have removed the dish machine which is required to effectively wash/rinse/sanitize multiuse utensils and equipment. This is a violation of the permit conditions. As a result, and intent to suspend the permit is necessary. According to the dish machine technician, Bryan from Gordon’s Food Service, via phone conversation and in person during this inspection, the replacement dish machine has been ordered, however, until installation, multiuse utensils and equipment are not permitted; disposable items are required to remain in operation. Also note, the facility was not busy during the time of this inspection, therefore, no violation of #16 was observed.”
