General CommentsEHS observed sausage stored in reheating unit at 78F and unit was not turned on. When EHS asked PIC about items, PIC stated that she was in process of reheating them. EHS educated PIC on ensuring that items are not held out of temperature control for extended amounts of time and best practice of bringing items to be reheated when they are ready to be placed on the line. EHS observed hot water at 3-comp sink peak at 111F and begin to fall and maintain a temperature of 107F. Ensure hot water at 3-comp sink is consistently at 110F or higher. EHS observed trash can in kitchen area with a lid that could only be opened by lifting the lid with your hands. EHS recommended a trash can with no lid or with a step to open lid to help ensure that hands are not recontaminated after washing when discarding paper towels used to dry hands. EHS recommended beverage cooler only be used to store non TCS items as its intended use is for beverages and item is non-commercial. EHS provided updated EHP (English) and V&D handout in Spanish.
