4-602.11 Equipment Food-Contact Surfaces and Utensils - Frequency (C) Ice bins shall be cleaned at a frequency to prevent accumulation. Observed orange, slimy buildup on baffle in ice machine. Notified employee and suggested draining ice and sanitizing inside ice machine. PIC stated that the ice bin was drained the other day and cleaned.
4-702.11 Before Use After Cleaning (P) UTENSILS and FOOD-CONTACT SURFACES of EQUIPMENT shall be SANITIZED before use after cleaning. Employee stated she was not instructed to sanitize equipment and utensils after washing and rinsing. |

4-303.11 (A) (B) Cleaning agents and chemical sanitizers that are used to clean and sanitize equipment and utensils shall be provided and available for use during all hours of operation.-Pf Upon arrival of inspection there was no sanitizer present in the food prep area not even the 3 compartment sink. Advised PIC to get bleach to the area before the end of inspection as sanitizer is needed to clean surfaces and is required when washing dishes/utensils. Chlorine was provided to PIC. CDI |
