[REPEAT] A few metal food pans stored in walk-in cooler were found still soiled with dried food residue on them after being washed and put away as clean. The blade of a vegetable slicer was found still soiled with pieces of dried, shredded lettuce from previous days use. One long handled spoon stored away on rack over utensil wash sink was found still soiled with dried food residue. CDI by requiring all of those items to be thoroughly rewashed, rinsed, and sanitized. Thoroughly wash all soiled utensils and food contact surfaces after use and before storing them away as clean for use. |

Observed two containers of sliced tomatoes and one large container of omelet mix stored away in the two double door upright reach-in coolers and they were past due to have already been discarded. Their required discard dates/times had expired. Corrected During Inspection (CDI) by PIC discarding those foods to waste. NOTE: Both of those foods had expired only 1.5 hours prior to being observed by REHS during inspection and were not planned to be used for breakfast which was taking place at the time of the inspection. PIC stated that he was aware they were to be discarded, but had just not yet gotten the time to discard them. He added that they were not going to be used and were to be replaced. Those were the only two instances of such violations in this category during this inspection and was not a repeat from last inspection. Therefore, there were no points deducted from the sanitation grade this time. However, points may be taken during the next inspection should repeats of this same violation occur. |

4-904.11 “Kitchenware and Tableware: Single service articles and cleaned and sanitized utensils shall be handled, displayed, and dispensed to prevent contamination.” A few single-use drink cups observed stored behind front counter and at To-Go window stacked high allowing the lip edge of many cups to be exposed to increased chance of being touched with bare hands. CDI by discussing with manager how the cups should be either stored in smaller amounts so that they do not stick up above the top edge of the holding tube or leaving the original plastic wrapping around them opened at one end so that when the employee reaches for a cup they can take hold of the plastic wrapping around the cup instead of the cup lid edges. CDI by plastic wrap from original packaging that had slumped down being pulled back up to cover the lip edges of the cups. |

The spray nozzle on the end of the water hose attached to the fixture at the service sink was found down in the sink basin and below the flood rim level (Top edge of sink basin). CDI by the water hose being picked up and hung to be properly stored in a way that was above the flood rim of the sink. |
