Observed stacked clean dishes with water residue on them. After cleaning and sanitizing, dishes must be placed in a self drying position to allow air dry. I am not taking points off but will next time |

4-602.13 Nonfood Contact Surfaces (C) Observed pink algae built up on the ice deflector guard in the ice machine. This needs to be cleaned frequently to avoid the build up. PIC had employee clean the deflector guard.

Ensure that any surface that has clean dishes stored is wiped down frequently to avoid dishes having food debris. |
