General CommentsNeed a copy of the Subway procedures for storing in use utensils on sanitizer; Need to keep walk in operating at proper temperature; set up prep table with no open holes so the temperature will properly be maintained at 41F or better. While it is not my position to guide through advice on number of employees. There are tasks that are happening that have to be walked away from to serve the customers. There was prep that had to be abandoned to serve the customer. Then we received a delivery.

Could use an extra person. There has been a delay setting up and prepping to getting foods in cooler to cool quickly. PIC will have to set up prep table, use thermometer and send a message to our office that foods are being held at 41F or below.

Utensils stored as clean in dirty containers are not maintained as clean. Found utensil is stored in stainless utensil pans that were dirty and had dried food residue. Ice scoop was stored in stainless pan that had dirt in it. Utensils stored as clean should be protected. Utensils were moved to be cleaned and sanitized. Baking pans had release build up on the edge of the utensil.

If there is an area that is not using a bucket/pan, make sure there is a lid or bucket in place to keep the proper temperature that is required for cold holding foods. You can move foods to Time as a public health control . When temperatures are not maintained or unit is not working properly You must use procedures and track time. Can hold for 6 hours is less than 70F.

This will be required to be verified in 10 days.

The walk in cooler is not properly being maintained as the owner had to blow out the hose line. It is not properly recovering temperature and creating condensate.

PIC moved utensil buckets to the sink to be washed. The metal bin that the ice scoop is kept in, needs to be kept clean from dirt and debris.
