Note: facility permit conditions state that facility is not allowed to cool heated TCS foods due to lack of equipment. Facility is in compliance with permit conditions during inspection. Was prepping salads and dough today during inspection for weekend. Facility is in process of looking at blast chillers to purchase, will reach out to MCHD before purchase and installation.
