Clean the equipment and utensils used with TCS foods as required to avoid contamination. Multiple dishes and pieces of equipment were visibly soiled and had a residue. Clean equipment, utensils, and food contact surfaces as required to prevent contamination.
Verification Required- An inspector shall return in 10 days time to ensure that food contact surfaces are cleaned and sanitized.

Sanitizer in the 3 comp sink and buckets was at 0ppm. Maintain quat sanitizer at 200-400ppm.

There is major floor damage in front of the hand sink by the dish area. The paint is chipping off of the metal corners in the store. Keep surfaces in good repair so that they are smooth durable and easily cleanable.

They need to be cleaned in such a way that food and equipment are not contaminated. |
