Tea urns and nozzles were not clean to sight and touch. Clean tea urns and nozzles nightly using the mechanical motion of scrubbing/cleaning to remove biofilms. Pans stored as clean had food residue on the inside and outside of the pans. These pans were stored stacked on top of each other. Properly clean dishes removing all debris before drying and stacking. Verification Required- An inspector shall return in 10 days time to verify compliance. Repeated Violation. 4-602.11 Food contact surface of a thermometer shall be cleaned, and sanitized per 4-702.11/4-703.11, before using or storing. P. The thermometer probe was stored dirty. Clean the thermometer probe before using and storing. Food handlers used thermometer to measure food temps without cleaning the probe before and after. Thermometers are a utensil as defined in chapter 1 of the food code. CDI- EHS cleaned the thermometer probe with an alcohol swab. EHS provided an alcohol swab to the food handlers. Repeated Violation. 4-501.114 Maintain sanitizer at correct concentrations when being used to sanitize. -P Quat Sanitizer in the buckets on the cook line were 0ppm. Maintain quat at 200-400ppm. CDI- Sanitizer buckets were refilled with properly concentrated quat.

The compartments of the 4 comp sink were coated with food residue and grease on the rinse compartment, sanitize compartment, and the clean side drain board. Maintain compartments clean to prevent the contamination of equipment and utensils. CDI- 4 comp sink was cleaned and sanitized.

Non-food contact surfaces of equipment shall be cleaned at a frequency to prevent accumulation of soil residue. All of the make tables and reach in coolers need to be cleaned more frequently as there is food debris all over the inside of every unit. Clean out the coolers at least once a day to prevent a buildup of food debris. Handles of coolers are also entrusted with food residue. Clean hand contact areas to prevent a build up of soil.

Do not store hose with nozzle in place and the water pressure in the hose. CDI- EHS turned off water and vented pressure to the hose. Repeated Violation. 5-205.15 Maintain a plumbing system in good repair. (P) The drain plug/valve in the 4 comp sink’s 3rd compartment was broken and would not close. Maintain plumbing in good repair. Repair leaking pipe. Replace and repair pedal valve. Verification Required- An inspector shall return in 3 days time to verify compliance.

The left side lid for the trash dumpster was missing. Both dumpster lids were broken on the recycling dumpster. The dumpster for garbage was leaking on the bottom left hand side. Keep dumpster lids in good repair and intact. Repeated Violation. 5-501.113(B) Keep dumpster, outside waste containers covered with tight-fitting lids or doors. The dumpster doors were open. Keep dumpster doors closed to prevent vector harborage.

Caution should be used to minimize food exposure. Floors, walls, and ceilings are visibly soiled and need to be cleaned more frequently to prevent an accumulation of soil. The heat/ac vent had an accumulation of soil on the fins. Repeated Violation. 6-501.16 Drying Mops (C) Mops were stored with the head above the handle. Store mops and other cleaning tools such as brooms with the head down. 6-501.11 Floors, walls, and ceilings including the attachments such as soap and towel dispensers; light fixtures; and heat/ac vents shall be maintained in good repair. HVAC vent was leaking directly over the 4 comp sink. Repair leak.
