Employees shall eat, drink, or use any form of tobacco only in designated areas to prevent cross contamination. Employee drink was stored on same surface as teas. Employee from another store was eating in the fryer area. Keep employee drinks under and away from food, equipment, linen, and single service storage areas. There are designated employee drink areas that need to be used. |

4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf.
Dirty number plates (used to identify foods and sit on the trays of food) that had food debris and grease accumulation were stored as clean. Tea nozzles had an accumulation of residue inside of them. Properly wash, rinse, and sanitize utensils before storing them. Nozzles and numbers were washed, rinse, and sanitized. The water line in the ice machine had sediment inside of it. Service ice machine.
Numbers and nozzles were cleaned.
Verification Required- An inspector shall return in 10 days time.
4-602.11 (A) (4) Food contact surface of a thermometer shall be cleaned, and sanitized per 4-702.11/4-703.11, before using or storing. P.
Both thermometers had dirty probes. Clean probes before and after use.

Ice bath in the make table was not high enough to keep the food items cold.The liquid eggs were above temp. Items in the grill drawers were above 41F. Cold held items must be maintained at 41F or below.

5-205.12 Prohibiting a Cross Connection (P) (Pf)
The hose was stored in the flood rim of the mop sink. There was pressure to the hose while the hose had a nozzle sprayer head. Keep the hose out of the floor rim of the mop sink. Turn off water and vent pressure from hose before storage.
CDI- Water was turned off and pressure vented from the hose. Hose was stored above the floor rim of the mop sink. |
