General CommentsObserved items holding at steam table. EHS asked PIC if items were reheating or already heated to temperature. PIC stated that facility holds items at steam table until 3p and then places items in oven to reheat due to facility not opening until 4p. PIC stated that items had been there for about 1.5 hours. EHS observed that items had started to reheat but would likely not have reach 165F within 2 hours without EHS intervention. EHS educated PIC on proper reheating procedures and PIC placed items in oven to complete reheating procedures.
