Large dough mixer bowl found in need of cleaning on the floor. Bowl removed and placed in ware washing to be washed, rinsed and sanitized. Utensils observed being cleaned at the 3 comp sink without being sanitized. All placed in the dish machine to be sanitized. Large Mixer exterior surface found in need of cleaning with build up, large bowl mixer as well as the large slicer found in need of cleaning. Pizza trays found stored dirty. Food contact surfaces are to be cleaned 4 to 6 hrs. All removed and sent to ware wash line to be washed , rinsed and sanitized. Ensure all are completely washed , rinsed and sanitized. Food contact surfaces are to be clean. Ensure the baking pans, dough prep pans and trays are cleaned every 4 to 6 hrs and not just left under make lines to be cleaned weekly. Food contact surfaces are to be cleaned every 4 to 6 hrs. CDI. |

Clean the tray holding racks under the pizza make line as well as the exterior lines, sides and arms. Clean the prep table top lines along the top lids, back ledges and edges with observed build-up. Clean the upper shelves/racks surfaces above the make lines and lower areas under the make line including legs and lower attachments. Clean the dough slide in hot cabinet around the doors, lower facing and interior tray lines. Clean the base of the slicer and dough mixer unit. Clean the interior portion of cold holds and fridges.
