General CommentsEducated PIC at time of inspection on keeping glass display hot box closed to prevent TCS foods at maintaining hot holding temperatures of 135F or below especially biscuits made such as sausage/egg/cheese, cheese biscuits, bacon/egg/cheese. Educated PIC about checking temperatures of TCS foods to ensure that TCS foods maintain temperature of 135F or above. Also addressed if product does not maintain hot holding temperatures of 135F or above possibly using TPHC of product and hot holding/labeling time and discarding after 4 hours.
