Cold air must flow around product to remove the heat. -Pf. Observed large, plastic container with fried chicken cooling at room temperature and cooked shrimp cooling in a large, metal container in the WIC. CDI-PIC voluntarily discarded items. EHS spoke with PIC to use shallow, metal containers (ie metal baking sheets) to allow for fastest cooling rate, especially for cooked items to reach below 70F within 2 hours and to prioritize getting cooked foods into WIC and avoid food slowly cooling at room temperature for extended amounts of time once the food has dropped below 135F.
