General CommentsEHS left business card with PIC should owner wish to discuss the date marking parameters for spicy mayo. Spicy mayo is a TCS food, and once opened, should not be dated for a hold time that exceeds 7 days. EHS encountered non-compliant guidance onsite stating it should be held for 30 days. EHS encourages the owner to reach out if any further clarification is needed, or with any additional questions or concerns.
