22 1.50 Proper cold holding temperatures Yes No No 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed edamame at 55F, PIC stated that he removed from the freezer and thawing under running water this morning, about an hour ago. Determined that the product is in the process of cooling but was covered. CDI - PIC uncovered to allow to cool properly to 41F and below. 33 0.50 Proper cooling methods used; adequate equipment for temperature control Yes No No 3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed edamame thawed and cooling covered and stacked. CDI - PIC uncovered and unstacked the two containers. Discussion with the PIC on proper cooling methods, explained that the edamame is in a deep container and the amount should be halved and to place in the upright reach in cooler since this one is not opened as often so the 41F and below is maintained.
