General CommentsEHS discussed sous vide procedure with PIC. PIC stated tomahawks are reserved nightly by guest. Once reserved, steaks are removed from packaging, seasoned, and then vacuum sealed. Steak is then sous vide at 130F, then removed to be grilled to whatever temperature requested by guest. This process does not need a HAACP as long as food is removed from bag and not cooled.
