General CommentsNote: Facility hours of operation are Tuesday-Sunday, 5 to 9:30pm. Employees typically arrive around 3:30pm to begin prep process. PIC Martin stated that facility is currently offering sushi Thursday-Sunday, all sushi comes in frozen and from an approved source (EHS confirmed with invoice and parasite destruction). Most products are raw (seafood, beef, chicken), processed and brought to hibachi tables to cook per order. Facility did not have any TCS foods in small prep cooler, sushi coolers, standing reach in. PIC stated process is to empty these coolers at end of night to ensure all TCS foods are in walk in coolers. Facility had limited amount of product in walk in coolers, have avoided overstocking on product during first few months of business.
