General CommentsPIC stated rice was cooling down on stove to then be placed in a ziplock bag and stored in the RIC. Cooling of hot foods is prohibited on MFU per permit conditions due to lack of necessary equipment. All cooling of hot foods should occur at the commissary only. Hot foods cooked on the MFU must be held hot at 135F or above and discarded at the end of service or transported hot (at 135F or above) back to the commissary to be cooled down properly at the end of service. EHS explained this to PIC who understood and agreed to not cool hot foods on MFU moving forward. EHS observed a table and a stack of chairs stored underneath tent in front of MFU. MFUs are prohibited from providing seating. Remove table and chairs. Continued noncompliance will result in permit action. Inspection completed in parking lot of Tienda Latina El Rincon located at 2125 Eastway Dr, Charlotte, NC 28205.
