-EHS observed metal drying racks with rust beginning to form. PIC stated they plan to eliminate rust and cover the racks over their scheduled 4th of July closure.
-EHS observed the silicone peeling away from the top of the 3 vat sink. Remove peeling piece and re-apply to ensure ease of cleaning.
-EHS observed paper towel being used to plug a hole in the ceiling of the walk in freezer. Remove paper towel and seal hole to ensure ease of cleaning. |

-EHS observed the salad prep unit not in use. PIC stated that it hadn’t been used in a considerable amount of time, with no plans to bring it into use again. Remove equipment if not planning to use it. |
