SINGLE-SERVICE AND SINGLE-USE ARTICLES SHALL BE STORED IN THE ORIGINAL PROTECTIVE PACKAGE OR STORED BY USING OTHER MEANS THAT AFFORD PROTECTION FROM CONTAMINATION UNTIL USED.
Observed single-use forks and spoons removed from their original protective packaging and stored in a container on shelving near a prep area. The utensils were stored with the handles facing downward and the food-contact surfaces facing upward and exposed.
EHS coached Manager to store the utensils with the handles facing upward or to keep them in their original protective covering until use. |

NONFOOD-CONTACT SURFACES OF EQUIPMENT SHALL BE KEPT FREE OF AN ACCUMULATION OF DUST, DIRT, FOOD RESIDUE, AND OTHER DEBRIS.
Observed grease and residue build-up on the exhaust hood. Manager verified that the exhaust hood is cleaned on a monthly basis.
EHS recommends increasing the frequency of detailed cleaning to more than once per month to prevent excessive accumulation of grease and residue. |
