3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed a cheese plate with mozzarella balls and skewered tomatoes that required date marking, and open hummus. PIC state items were made yesterday and opened day before. CDI Both items date marked.
