Observed cut toamtoes dated, 5/26, corn and bean salsa dated 5/26, blue cheese dated 5/26 and some in cups from the same batch dated 5/28, and milk that was already opened dated with the day that it was frozen but no thaw date. Discard TCS foods once the seven days have expired and date TCS food that was frozen with the make/open date and date that it was thawed. CDI/PIC discarded foods that were expired and dated milk correctly. |

Observed potato salad, avocado crema, and marinated pork chops in the cooling process with tight covered containers, in the working units or both. Use proper cooling methods such as open vented containers, and use the walk-in or the freezer to cool foods. CDI/PIC moved crema to the freezer, placed potato salad on a tray an into the walk-in and vented and ice bathed the pork chops. |

All three gaskets of the three door flip top are torn. Replace. REPEAT violation but not points taken becasue it is a minor violation and temperatures were good in this unit. |
