2-401.11 Eating, Drinking, or Using Tobacco (C)- Employees shall eat, drink, or use any form of tobacco only in designated areas where the contamination of exposed food; cleaned equipment, utensils, unwrapped single service items or other items needing protection can not result. A cigarette that was previously lit was on a shelf in the dry storage room near the freezer and storage of single service items. An employee drink was on the clean side of the three comp sink next to cleaned utensils. Drink can be stored on the other side of the three comp sink, or another location below and away from cleaned untensils and food. |

4-501.11 Good Repair and Proper Adjustment - Equipment (C)- Equipment shall be maintained in good repair. The large two door freezer had a broken handle, missing bottom plate, accumulated ice, and a bulb that is burned out. The freezer below the pizza oven had a torn gasket. |

5-402.13 Conveying Sewage (P)- Sewage shall be conveyed to the point of disposal through an approved sanitary sewage system or other system, including use of sewage transport vehicles, waste retention tanks, pumps, pipes, hoses, and connections that are constructed, maintained, and operated according to law. Mopwater is considered sewage and is required to be disposed of through a sewage system. Per discussion with the PIC the mop water is disposed of outside. CDI by education and confirming their is a mopsink that can be used for disposal. |
