The hot holding unit is only approved for hot holding food and not reheating food. Reheating should take place in approved equipment, like the oven or the flat top. Food that had been previously cooked and then cooled down to be used on a different day should be reheated to 165 degrees F or hotter in approved equipment. CDI: PIC moved the items to the oven to be reheated.

PIC stated the company who came to pick up the grease recently spilled it and didn't clean it up. PIC stated he would clean it up as soon as possible. Refuse areas should be aintained clean.
