Any time hands come into contact with raw animal proteins, gloves should be discarded and hands washed before continuing anything. The worker was corrected during the inspection by removing gloves and washing hands.

Pf -Observation: bottle with lactic acid sanitizer didn’t have any identification at the bar. -Corrected During Inspection (CDI): Person in Charge (PIC) voluntarily wrote “SANITIZER” with permanent marker on the bucket. 7-201.11 Separation - Storage (P). Observed pesticide and wood stain and caulk stored above packages of buns on the outside of the back door. Observed a personal medicine being stored on a shelf above a prep sink. Keep medicines and poisonous materials stored underneath any food or food contact surface. The person in charge collected everything and put it in a crate as the corrective action.

Observed ramekins being used as scoops for ice cream toppings, observed tongs being stored on top of raw hamburger meat with the handle in contact with the meat, observed a sugar scoop with the handle touching the sugar. Scoops must have handles and the handles must not come into contact with the food product they are being stored inside. Provide scoops with handles and keep them outside of containers or stored properly in the food product. Corrected when encountered by removing utensils. It is recommended to keep the burger tongs stored outside of the cooler drawer so that the tong handles never touch the patties.
55 0 Physical facilities installed, maintained & clean No No No REPEAT 6-101.11 Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed to be smooth and easily cleanable. -Observation: floor in kitchen area doesn’t have the coating anymore and it can no longer be considered cleanable. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC). -UPDATE: no buildup was found.
