3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf: Found deli sandwiches made today in two door flip top unit while in cooling process. Sandwiches were wrapped / covered and were 53 F after one hour. CDI- sandwiches moved to freezer and uncovered for cooling to be completed within 3 hours.
