3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P- *Observed - 4 containers of Egg Patties, 3 containers of sliced cheese, and 3 containers of sausage patties above 41F, see temp chart for details. PIC stated items were above temperature due to frequent opening and closing of WIC door due to early morning rush. PIC showed EHS IPad with log showing routine checks on cold holding units where they temp check one food item per unit and log it. *CDI - PIC voluntarily discarded all items date marked 07/24/25. PIC placed all items date marked 07/25/25 (portioned this morning) into WIF to be rapidly cooled.
