3-302.11 Packaged and Unpackaged Food - Separation, Packaging, and Segregation (P) - EHS observed raw sausage links being stored above ready to eat foods in the 2 door fridge. EHS observed a opened box of ground beef for cheese steaks being stored above opened packages of vegetables in the freezer. When opened from its manufacturer packaging, stacking order applies in a freezer. Food should be stored in order of final cook temperature, with raw pork products being stored below ready to eat foods and raw beef being stored below vegetables.
CDI: PIC rearranged the food correctly. |

CDI: PIC remade the sanitizer buckets to 400 ppm quat. |
