3-304.12 - C During pauses in FOOD preparation or dispensing, FOOD preparation and dispensing UTENSILS shall be stored in the FOOD with their handles above the top of the FOOD, in a clean, protected location if the UTENSILS, such as ice scoops, are used only with a FOOD that is not POTENTIALLY HAZARDOUS or in a container of water if the water is maintained at a temperature of at least 135°F and the container is cleaned as required.
The ice scoop is being stored in an ice bag that is being reused. The ice bag should be replaced daily, place the scoop in the ice with the handle up, or store the ice scoop in a container that can be washed, rinsed, and sanitized.
The self service tongs are being cleaned once a day. Utensils should be cleaned every four hours. |
