3-403.11 Reheating for Hot Holding (P) Meat balls that were recently placed on the line were ranging from 105F to 133F in the middle. PIC state that they were microwaved twice them put out without checking temperature first. When reheating TCS leftovers, rapidly heat to 165F. If heating TCS foods still in factory packaging, they can be heated to 135F or above. CDI - Since meatballs were in the danger zone for a short period, they were rapidly heated to 185F. |

3-501.13 Thawing (Pf) - Repeat - A bag of grilled chicken strips was observed sitting in the bottom of the prep sink to thatw. Thawing must occur in one of the following ways: under refrigeration at 41F or below, as part of the cooking process, under cold running water that is 70F or below, (or if cold water is above 70F, thaw with coldest possible running water and ice). The food should not reach above 41F when thawing. CDI - Chicken was still frozen. Bag opened, chicken placed in pan, and moved to temperature control. |
