Areas in the warmers on both sides of the cook line need to be cleaned around the door opening and the bottom of the warmer where food tends to fall. Gasket on the lower reach in freezer by the fryer needs to have gaskets cleaned and surface of the inner door wiped down. Inside of the walk in cooler the compressor fans have dust build up and need to be cleaned. Please clean these items before your next inspection, if this is not done, half points will be taken. |
