Walk in cooler outdoors is not currently operable.
3-door reach in freezer has ice buildup on the inside that will need to be removed and cleaned.
One two door cooler in second room not in use and is not functional. Repair or replace.
Metal covering on inside door of cooler near new 3-comp sink needs to be sealed.
Small leak present at dish machine prewash spray wand and around dish machine catch basin- needs caulking

Hot water at 3-compartment sink in new prep room was below 110F initially when 3-compartment sink in main prep area was being used. Hot water is plumbed off of the hot water line leading from main 3-comp sink. When this sink is being used, it takes hot water from the system leading to new 3-comp sink.
Additionally, on-demand hot water tank is set at 140F and with peak demands, an increase in water temp or an additional unit may be deemed necessary as volume increases.
5-103.11(B) - Capacity: Provide sufficient hot water to meet the peak hot water demands.-Pf
CDI: Water reached min requirements once ran for about 10 minutes. Please provide update or plan to increase hot water availability during peak demands. |
