Handwash sink in biscuit prep area measured 130F and would not be considered accessible for proper handwashing at this high temperature. CDI-Mixing valve adjusted and now measures 107F. |

4-301.13 Drainboards (C) Drainboards, utensil racks, or tables large enough to separately accommodate all soiled and cleaned items that may accumulate during hours of operation shall be provided for necessary utensil holding before cleaning and after sanitizing.
Dish machine has soiled storage on both sides. One of these sides needs to be for clean utensils holding. Additionally, soiled dishes are accumulating heavily throughout prep and spilling over into "clean and sanitized" holding area of 3 comp sink. Recommend making one side of dish machine a clean utensil holding area and having someone on dish earlier in the day so that soiled items do not accumulate into clean areas. |
