General CommentsTemperature of pork on TPHC was taken for demonstrating to PIC the necessity of maintaining a 4 hour window, and not 6 hour window, for holding products on TPHC at room temperature. Ambient temperature of facility does not facilitate the safe application of 6 hour TPHC. EHS went over procedures for TPHC with PIC to ensure understanding and that there is compliance for carrying out a 4 hour TPHC procedure. EHS encourages the PIC to reach out with any further concerns or question that may arise.
