All of the cold holding foods being held inside of the cook line cold holding drawers had temperatures between 42F and 45F during today’s inspection. All cold holding time/temperature control for safety foods shall be maintained at 41F or less. The manager voluntarily discarded the sliced cheese and placed containers of raw steak/chicken inside of the walk-in freezer to be cooled down during the inspection.
The manager stated that employees weren’t fully shutting the drawers during service that day which may have been the reason for the temperatures observed today. The REHS told the manager that a work order needed to be submitted to have the cold holding drawers serviced. CDI |
