3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed several milks (dairy, coconut, oat) that were holding above 41F . CDI PIC voluntarily discarded. Discussed placing milks from 7 am -10 am on TPHC, holding on time vs cold hold bc items are constantly pulled from RIC. Left TPHC form for PIC to decide. Repeat
Note: Facility has ensured correction of every instance in the last three inspections for cold holding issues (properly functioning equipment x2, stacking TCS items too high in prep unit). However, long term compliance checks and/or risk control plan will be implemented if cold holding issues have not been corrected in all areas at next inspection.
