General CommentsDiscussed with cook the process of cooking the chicken wings due to a complaint our office received. The cook said that they cook them in the oven without getting to 165F and then when someone orders the wings they fry them in the deep fryer to 165F. Educated PIC that they have to have prior approval from Sampson County Environmental Health Department before they can do the non-continuous cooking process. Facility needs to provide updated kitchen/cook line floor plan layout and spec sheets for all new equipment that has been added in the facility to Sampson County Environmental Health Department. Base on amount of food storage today additional refrigeration is need to store foods to prevent cross contaminated or have smaller food deliveries more frequently. Once facility is ready to raise the Sanitation grade call 910-592-4675 to request a reinspection.

Observed staff using dishwashing machine to wash, rinse, and sanitize dishes with no sanitizer connected to machine. Facility had no containers of sanitizer to use for dishwashing machine. Staff started using dishwasher only to wash and rinse and is using 3 comp. sink to sanitize dishes.

Had staff moved all items that had been place in units this morning in other refrigeration to cool down and voluntary discarded any items that had been in them over night. Have maintenance come look at units. Observed sweet potatoes fries on top of deep friers above 41F. Had staff the sweet potatoes back to coolers and educated they can't leave them out at room temperature; they have to keep them hot or cold.

Paint ceiling tiles more to be non-absorbent, smooth and easily to clean or replace them with non-absorbent, smooth and easily to clean tiles. 6-501.12 Cleaning, Frequency and Restrictions (C). Observed ac return covers dusty. Clean ac return covers.
