Observed containers of rice that was on prep table then moved to walk-in cooler during inspection where it had a lid on it tightly closed where staff where cooling it down and it was between 41F-135F. Once food drops below 135F PIC is to start to cool foods using proper cooling methods of small portions, metal pans, open lids, ice paddles, walk-in coolers, freezers, and etc. PIC lifted lid.

Water hose was moved up from bottom of can wash and moved aerator up above the flood rim of hand sink, but educated PIC that aerator for hand sink needs to be removed. 5-203.14 Backflow Prevention Device, When Required (P). Observed no backflow preventor on can wash where water hose was down in can wash. PIC moved water hose out of can wash to make a air gap.

Observed ceiling tile in chemical storage area broken/missing and shoe molding missing at door ways to hallway near hot holding unit. Fix/replace areas.

Observed griddle tops, mixer area, prep table, prep cooler, and prep sink near griddles with 19-44 foot candles of light. Some of the lights were dim. Increase amount of lighting to 50 foot candles on these surfaces, by using brighter lights, replacing dim lights or adding lighting fixtures.
