Observed raw shell eggs over RTE cabbage and other RTE foods in back refrigerator and raw bacon was over RTE bologna and chicken in glass doors refrigerator. Eggs and bacon were moved from above RTE foods. Educated staff that the stacking handout is not by shelf but by final cook temperatures of RTE and raw animal foods. Gave stacking order handout. |
