Whole shell eggs 70F in pan next to griddle. TCS foods must be held 41F or below at all times. Eggs had been out for 3 hrs, so staff placed them in freezer to quick chill back to 41F. Leave eggs in top portion of prep refrigerator in the future. All foods inside walk-in cooler 47-49F. Unit has been malfunctioning since yesterday according to PIC. All ready to eat TCS foods and box of raw chicken discarded. Other foods such as sealed cheeses and whole shell eggs moved to other properly working refrigerators. Do not restock walk-in until properly repaired. Without walk-in cooler, kitchen does not have adequate refrigeration. Additional visit will be made tomorrow to verify cooler repairs or possibly suspend permit due to inadequate refrigeration space. Additional refrigerators can be brought in if needed. 3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P) |
