Eggs are hard to keep 135F and above. Advised to switch eggs with the grits so that they are further away from the doors. Have PIC voluntary discard eggs at the end of breakfast due to it is less than 4 hrs.

Observed items that were place in the kysor warren display case this morning were not holding 41F and below, but items that were in there over night were. PIC pulled items from unit above 41F and placed in a refrigerator to cool down. Observed TCS foods in produce display case above 41F. Staff said that maintenance had just came out about 3 weeks ago to fix unit. Staff pulled all items to place in deli walk-in cooler. Have maintenance come look at unit.

To get walk-in cooler approved for use under the deli's permit called 910-592-4675 to set up a meeting to look at the cooler to see what needs to be fix for it to be approved equipment. 4-501.11 Good Repair and Proper Adjustment - Equipment (C). Observed doors for salad display case and bar hot holding unit broken and have been taped together. Replace doors. Observed several fly lights with light bulbs not working. Replace fly light bulbs. 4-402.12 Fixed Equipment, Elevation or Sealing (C). Observed hood system caulking missing/coming off. Re-caulk hood system.

Better than last inspection. Kept cleaning equipment.

Observed a ceiling tile in dining area that is missing and duck work is sagging below ceiling and a ceiling grid at the meat prep sink is hanging down. Reinstall a ceiling tile and fix ceiling grid. 6-501.11 Repairing - Premises, Structures, Attachments, and Fixtures - Methods (C). Observed light cover at meat prep sink/hand sink broken. Replace light cover.
