Mac and cheese found inside walk-in cooler at 54F. Staff could not account for why food was above 41F. Other foods from yesterday were 36-39F, so staff voluntarily discarded mac and cheese. Foods in drawer cooler under grill are 42-45F. Advised staff to ensure doors are being completely closed so temperatures do not rise. Foods in upright refrigerator to left of grill 43F. Even once business slowed and workers not going into refrigerator for some time, air temp inside cooler still 43F while display showed 38F. Have unit checked or turned down more so that food temps remain below 41F. Will follow-up tomorrow. 3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P) |
