Main walk-in cooler holding foods 48F. PIC stated temperatures were checked and below 41F this morning. TCS foods were moved to 2nd wi cooler to chill back to 41F. Unit had frozen up. Repairs should be complete in a few hours. Will follow-up tomorrow to verify proper cold holding temps of 41F or below. Cole slaw on hot dog bar 67F. Spaghetti sauce prepared yesterday were placed in medium sized tub, but completely full and placed in walk-in cooler with tight fitting lids. Foods being cooled must be broken down into smaller portions and not covered to aid cooling process. Foods were discarded. Beef broth was 103F and still sitting on food prep sink.
